Here's a delightful fall recipe for Pumpkin Spice Mug Cake, perfect for a quick homemade treat!

Pumpkin Spice Mug Cake

This easy recipe yields a warm, spiced cake in minutes, ideal for those cozy autumn evenings.

Yields: 1 serving Prep time: 2 minutes Cook time: 1-2 minutes

Ingredients:

  • 4 tbsp all-purpose flour

  • 4 tbsp granulated sugar

  • 1/4 tsp baking powder

  • 1/4 tsp pumpkin pie spice

  • Pinch of salt

  • 3 tbsp milk (any kind)

  • 1 tbsp vegetable oil

  • 1 tbsp pumpkin puree

  • 1/2 tsp vanilla extract

  • Optional toppings: whipped cream, a sprinkle of cinnamon, caramel sauce

Instructions:

  1. In a microwave-safe mug (about 12-14 oz), whisk together the flour, sugar, baking powder, pumpkin pie spice, and salt until well combined.

  2. Add the milk, vegetable oil, pumpkin puree, and vanilla extract to the dry ingredients. Stir well with a fork until there are no lumps and the batter is smooth. Be careful not to overmix.

  3. Microwave on high for 60-90 seconds. Cooking times can vary based on your microwave's wattage, so start with 60 seconds and add 10-15 second increments until the cake is set and springs back when lightly touched. Be careful not to overcook, or it will become dry.

  4. Carefully remove the mug from the microwave (it will be hot!).

  5. Let it cool for a minute or two, then top with your favorite additions like whipped cream and an extra sprinkle of pumpkin pie spice or cinnamon.

  6. Enjoy your warm, delicious fall treat straight from the mug!
