  • 1/3 cup fresh lemon juice (the acid helps the filling set!)

  • 1 teaspoon vanilla extract (optional, for flavor)

 

Instructions

 

  1. Soften Cream Cheese: Make sure your cream cheese is at room temperature. This is essential for a smooth, lump-free filling.

  2. Combine Filling Ingredients: In a large bowl, use an electric mixer (handheld or stand mixer) to beat the softened cream cheese until it is completely smooth and fluffy, about 1-2 minutes.

  3. Mix in Condensed Milk: Gradually beat in the sweetened condensed milk until well combined and smooth, scraping down the sides of the bowl as needed.

  4. Add Flavor: Beat in the lemon juice and vanilla extract until the mixture is uniform. The mixture will start to thicken slightly almost immediately from the reaction with the lemon juice.
